Alcohol Infused Dragonfruit

Last summer I saw this yummy recipe for a dragonfruit cocktail and it piqued my interest, but at the time I couldn’t find a really fresh dragonfruit. Last week I finally found one, but wouldn’t you know it I didn’t have all the ingredients for the cocktail.  All I had was the coconut rum. Well, I made do.  You know,  fresh dragonfruit soaked in coconut rum is pretty tasty.
